Chef Paul Prudomme literally invented blackened. Blackened Red Fish, Blackened Steak, Blackened Lobster - Blackened... you fill in the blank. Service is awesome, casual dress is ok. Try for a seat on the second floor balcony in the evening.

Home of Chef Paul Prudhomme, godfather of cajun cuisine, this restaurant is a New Orleans institution. Must Try: Blackened Drum and Bread Pudding with Hard Sauce. Visit the restaurant of the late, great celebrity chef Paul Prudhomme. A great spot Thursday thru Saturday for a deli style lunch and reasonable prices.
