An intimate, brick-walled Paddington restaurant run by young gun chef Josh Niland, this place is a window into the finest seafood Australia has to offer. With a Zen-like approach to preparation and cooking, Niland’s seafood dishes are pared back but perfectly executed, like a 10-point pike dive rather than a triple backflip with sloppy turns. Don’t expect a cascading seafood platter or greasy fish and chips. Instead, you’ll find things you may have never considered before: fish liver, fish heart, or something cured or with scales on it. But trust this chef—everything is bloody delicious. And you must finish with the lemon tart.

Executive chef Josh Niland has been making waves in the Australian culinary scene since opening Saint Peter and more recently the complementary Fish Butcher where his fin-to-scale philosophy of cooking is heroed. Saint Peter is one you must try while in Sydney, bookings are essential.
