"At Lock Street Brewing Company, we follow the German Purity Law of reinheitsgebot (rine-heights-gah-boat), which emphasizes only four ingredients shall be used for the brewing of beer: 1. Water 2. Malt 3. Yeast 4. Hops We try to adhere to this rule for all beer brewed in our facility. If a particular beer does require an additional ingredient, we make sure that it is 100% organic and locally sourced from Niagara. There are no additives to speed up any aspect of the brewing process, and all brewing goes unfiltered. Any brew can spend between one to eight weeks in a fermenter before it is on tap or packaged. We pride ourselves on our philosophy “We take our time, so you can enjoy yours”, meaning we take our time perfecting every brew before you take your time to enjoy it."
