A must drink barista coffee... consider top 10 in Australia. Seven Seeds takes its name from the precious cargo which Baba Budan smuggled out of Yemen and into India during the 17th century. By strapping seven seeds of fertile coffee to his waist, Brother Budan broke through the tightly regulated system which had, until then, kept coffee cultivation within the confines of the Arabic world. Because of Baba Budan and his determination to spread coffee around the world, we are now able to source beans from the Americas, Africa and Asia.

Inspired by the modern bodega, Bomba Tapas Bar and Rooftop has replaced the old Aylesbury with a more casual venture, allowing chefs and co-owners Jesse Gerner and Andrew Fisk to return to their Spanish roots and cook dishes from the entire region. Essentially a Spanish workers bar, simple and affordable tapas bites of fried oysters, cheesy manchego croquettes and small char-grilled sourdough montadidos with tomato and Serrano jamon are perfect for sharing, with raciones on hand for larger appetites (the predominantly Spanish wine list comes well within budget too).

Who doesn't know about this cafe? Located amid the mish-mash of eateries on Hardware Lane sits a tiny cafe that pulls in a large number of city dwellers all week. The interior is clean and bright and the space is small, but there are several tables out the front overlooking the lane to help with indoor overflow. The counter is adorned with sweets. Macarons are set in lines next to other baked goods such as almond praline biscuits and croissants, which go down well with coffee in tea party crockery or teapots with colourful, woolly cosies.

It’s not all about the hot chocolate. Sure, it’s serving dark Mörk cocoa in a beaker and poured over house-made fairy floss, which collapses into a sticky chocolate morass. But Hash Specialty Coffee on Hardware Street is also rocking hearty, stick-to-your-ribs dishes, such as its sunny egg, Istra chorizo, chilli and scallop all-day breakfast, served on a slice of toast by Zeally Bay Organic Bakers. There are coconut-yoghurt panna cottas beneath a veritable arbor of fresh flowers. The coffee is specially roasted for the cafe by Reverence Coffee Roasters and the single-origin options change every two weeks.

Located on Drewery Lane, a few steps away from Baroq House, Little Rogue is its sole laneway cafe – you’ll spot it by its bright blue door. Inside, it’s white walls, birch floors and there’s just enough exposed brick that it doesn’t feel like its self-consciously “performing” Melbourne. One of its crowning features is a lightwell flanking the coffee machine, a rarity for a building this deep into the CBD. It’s a first venture for ex-Plantation baristas Leo Lee and Calvin Ko, serving Small Batch’s Candyman beans as the house blend. For the moment, the cafe is playing the menu by ear, but you’ve got a selection of sweets to choose from, inclusive of financiers and crepe cakes by Mille and B’s

With an overhanging neon boot marking the spot, this narrow, lightly toned cafe from Mark Dundon and Bridget Amor of Seven Seeds and Brother Baba Budan evokes the nostalgic warmth of the old American Airstream caravans. Run by Jos Turner, formerly of De Clieu and Seven Seeds, Traveller exists in order to provide top quality coffee to the top-end of the city. Those familiar with Brother Baba Budan will recognise the coffee-based offerings, with a small selection of cakes and pastries from Brioche by Phillip to accompany. While Traveller is standing room only, it boasts a European-style bar for flicking through newspapers on a busy workday.

With a long list of environmental pledges, it seems that Dukes Coffee Roasters couldn’t have been better fit for community-owned Ross House in Flinders Lane. Aside from saving the planet, the team is flat out doing what they do best – pumping out specialty coffee and maintaining the sophisticated reputation they’ve built from their original sister cafe in Windsor. Like most sisters, the two cafes sport a similar look (both designed by Chris Connell), however the Ross House location has a few unique quirks of its own. The interior has been fitted with recycled tiles and reclaimed timber, and proves warm and intimate with minimal seating.

Unlike its bigger suburban brother in Hawthorn, which houses a roastery and kitchen, this satellite Axil Coffee store is a fast-paced, standing-room-only espresso bar. Although it sits alongside many of Melbourne’s most popular restaurants at the east end of Flinders Lane, it’s found a small speciality coffee gap on the Exhibition Street corner, as the stream of takeaway coffees can attest. The same serious approach to top-quality coffee has been applied here as at the bigger roastery. Whether extracted from the slick, custom-black Spirit espresso machine or filtered through AeroPress, pour-over or Chemex, the roasts are carefully matched to the best process and also rotate regularly.

Operator25's owner/chef Valerie Fong (ex-Bacash), brings a fine-dining flair to brunch, that humble in-between meal that’s become a staple in the Melbourne diet. Hidden down Wills Street in the business grid around Flagstaff Station, the space is a trendy hideout from the rest of the CBD. The rustic brick interior serves as a reminder of the heritage-listed building the cafe resides in. It was the home of Melbourne’s first telephone exchange company. The modern furniture and lush flower arrangements set a cosy ambience in the sleek industrial setting. The menu by head chef Felipe Guedes, another ex-Bacash chef, boasts options such as pressed lamb shoulder and belly with Romesco sauce.

Small batch on-site roasting that's delivered passionately by an army of skilled baristas places this city cafe (and its Gridlock beans) in the upper echelons of Melbourne coffee. 65 Degrees is run with such high attention to detail that it's hard not to be swept up by the sheer energy and dedication to the bean. Expect a corporate crush before midday as loyal fans come to see which single origins are playing that day; usually a mix of five or more from Asia, Africa and South and Central America that rotate at dizzying speeds. Espressos burst with aromas, while consistently-smooth, milk-based takeaways are served with pace.

Vegie Bar is a thriving vegetarian restaurant in the heart of Brunswick Street, Fitzroy with a down-to-earth vibe and an infectious bonhomie, it has made a name for serving up strictly vegetarian (including vegan, gluten free and lactose-intolerant dishes) for over 20 years. What began as a relatively straight-forward warehouse conversion has, over the years, become something much bigger, with an extension reaching into the building next door, a mezzanine floor and a bar/courtyard out the back. The menu features broad range of dishes that reflect a mostly Asian focus. Dishes might include fried noodles, large vegetable curries with various sauce choices and a range salads.

Soon, you may conceivably be able to stand in line for Chin Chin’s fiery Thai food, then spin 180 degrees and be standing in a totally different queue, for Kisumé. Chris Lucas, director of The Lucas Group, has bought a site on Flinders Lane, just 150 metres from Chin Chin. He's turning it into a smart Japanese diner. Lucas has had this one on the brain for a long time. Since spending three years in Japan in the ’90s, he’s explored pub food (The Botanical), Thai (Chin Chin), Italian (Baby), Korean (Kong) and Malaysian/Singaporean (Hawker Hall).

The name AU79 says something about the ambitious goals of the team behind the cafe. It’s the first original venture from The Coffee Culture Communication Group, which bought established cafes such as Loco Coffee, Sir Charles Liar Liar and Addict Food and Coffee. Au and 79 are the chemical symbol and atomic number for gold, and when you arrive at the cafe on Nicholson Street, you’ll see its gold standard: the name spelled out on a shiny, metallic gold sign attached to the black brick building. The old motor garage was transformed by Melbourne-based Mim Design, with stained cement floors and old tyres in what feels like a sprawling indoor botanical garden.

12 years on Gin Palace is still making and is most highly renowned for outstanding martinis. And that is one of many reasons why this plush den is an institution today. The menu has changed little and Vernon himself will tell you that Gin Palace martinis are made exactly the same today as they were when he opened (Gin Palace’s Martini Master Class is available upon request). This fact, along with ‘we never close’ hours, the very gorgeous staff who offer table service as good as the best and in the traditions of grand hospitality, Gin Palace provides guests with a choice of delectable tidbits, to ensure that every sense of gustatory well-being is entirely satiated… hmmmm!

The Bourke Street Mall is a pedestrian and tram-only strip running between Swanston and Elizabeth Streets. The mall is Bourke Street's most famous feature and contains retail hubs like Melbourne's GPO, Myer's flagship store and David Jones' second flagship. Concepts for a Bourke Street Mall were drawn up as early as 1964 by Robin Boyd and Frederick Romberg[4] however the ambitious multi-platform design which separated cars from pedestrians was never realised. Plans were eventually scaled down with pedestrians sharing space with a grade level tramline. The pedestrian mall was officially opened in 1983 by Their Royal Highnesses, Prince Charles and Diana, Princess of Wales.
