Curd (or as city folk call it: "cheese curd") is a very common food in eastern Ontario and you'll often find it in bags just sitting at the cash counter. Curd is best eaten warm so leave it on the counter till it gets to room temperature. Fresh is always better so go to Empire Cheese and pick up some squeeky curd. Pro tip: if your curd get old (gasp!) put it in a collander and pour a bit of boiling water over it to return it to it's salty squeeky yummy nature.
