Parma is bike-friendly city! The bike is the ideal means of transport to discover the ducal city with its parks, monuments, history and charm. I want suggest you an half day bike tour to enjoy my city and our typical products! We start early morning (at 8:30) or in the afternoon (at 3pm) to visit a Parmigiano Reggiano cheese factory to see all production chain, the different rooms and the huge storage with inside a lot of wheels!!! There is also a tasting of 3 different Parmigiano Reggiano ages. The cost for the tasting is not included in the experience: 8€ per person in the morning and 6€ per person in the afternoon. Free for kids under 12 years. After, we ride the bike in the countryside to see our crops and our nature! We come back in the city through a bike lane near the river and visit the city center with our bikes through its restricted traffic zones. The Secrets of Parmigiano Reggiano Full
At the arrival I will offer you cofee break, and I will give you a lab coat for the access to the production area. I’ll bring you along a complete tour to discover all the steps of Parmigiano Reggiano’s production. We’ll see where the animals are bred and where the milk is mould. We’ll go into the cheese factory during milk processing and we'll witness in cooking and making cheese wheels. We’ll see then the process of salting and maturing up to enter the huge “caveau”, where thousands of cheeses wheels are guarded and laid out in long rows in the silent maturation rooms and where the scent of cheese will smell so nice and exciting that we won’t be able to resist till the final tasting of cheese and local typical products. Half Day Parma Lowlands Food Experience
The Lowlands of the Province of Parma consist in the plain north of Parma - a territory characterized by the respect for ancient traditions, rich in history, art and genuine food, to enjoy at a slow pace. Our route to the discovery of the Parma Lowlands starts crossing the strip of land running from the northern outskirts of Parma to Roccabianca, to reach Zibello and Polesine Parmense, places where time seems to have stood still. We will visit a farm devoted to the recovery of ancient local breeds, we will see the vegetable gardens and the vineyards. Few people know that this is the area in the world where you can find the greatest variety of cured meat! During the visit you will discover the masterpieces of the local culinary tradition and learn about the features and the origins of Fiocco, Spalla di San Secondo, Salami, Strolghino and the king of cured meat, the PDO Culatello of Zibello, produced and refined in the magnificent cellars of an ancient fortress from the early 1300s that has been perfectly restored and endowed with a fine restaurant, where it is possible to enjoy the best of Parma cuisine. The visit will end with a rich tasting, a real joy for the senses! Transportation is not included, but we can arrange it at an extra cost. Upon request and at an additional cost, it is possible to include a visit to a Parmigiano Reggiano cheese dairy.
Slow Parma Food Experience
Looking for an authentic experience, far from the major tourist flows, to discover the soul and traditions of the Italian Food Valley? Come and discover Emilia Romagna and its food excellences, Parmigiano Reggiano and Prosciutto di Parma at a slow pace, relying on the experience and professionalism of a local guide. Visiting a Parmigiano Reggiano dairy with us, you will be able to follow the whole production chain, from the feeding of milking cows to the forming of the curd in the typical copper kettle. You will be able to observe closely the cheese master’s experienced hands during the breaking of the curd with the “spino” and his deft movements during the scooping of the cheese out of the kettle. After this unique experience you will visit the resting, salting and ageing rooms with their enveloping scents. The visit will end with a tasting, a real pleasure for the senses! We will then transfer to the hills of Parma to visit a plant where the inimitable Prosciutto di Parma is produced. We will stop on the way at the foot of the mediaeval castle of Torrechiara to take some pictures. The tour will end with a lunch of typical Parma delicacies (a selection of cured meats, fresh home made pasta and traditional cakes) and wine from the Parma Hills region. Transportation is not included, but we can arrange it at an extra cost. Dogs are not allowed in the facilities.

Thanks to this experience you will not only learn how to make pasta but you can also discover Calestano, a very characteristic medieval village that you will not find on any map. Don’t have a car to reach us? Don’t worry, offer a transport service from the centre of Parma. Once reach my house we will teach you to create two types of pasta with: Tagliatelle Ravioli (ricotta and seasonal ingredients) While pasta cooks you can also taste cold cuts and cheeses typical of this area with a good wine (red or white - you can choose). Meeting the king of cheeses
I'll pick you up (or jump in your car/bus/van/etc) and bring you to the cheese factory. You will wear headsets (if you're more than 2), so that you'll be able to hear me...the production room can be really noisy! We'll visit the cheese factory (it will take more or less 1.5 hours) and, if you wish to, have a tasting of this wonderful cheese (paid separately). You can buy Parmigiano Reggiano after the visit and have it vacuum-packed. Other things to note Parmigiano Reggiano's production starts early in the morning. We should be ready to leave at around 8:30 am, at the latest. The visit will last roughly 2 hours.

Trekking fluviale tra cascate, piscine naturali e borghi
Un fantastico trekking fluviale ci porterà a scoprire la Luni-Jungle, la giungla di Lunigiana, dove la natura incontaminata regna sovrana! Attraverseremo una terra tra due fiumi, il Fiume Magra e il torrente Civasola, percorrendo a piedi questi due corsi d'acqua per godere di prospettive uniche mozzafiato. Prima risaliremo un tratto del torrente Civasola per abituarci a camminare nell'acqua, fino al "Ponte che balla", un ponte tibetano che ci porterà sull'antica Via Francigena, il pellegrinaggio che porta sino a Roma. Seguiremo questa antica via, passando attraverso borghi medievali dove il tempo si è fermato, fino a raggiungere un antico ponte medievale che ci porterà a scoprire il Fiume Magra. Seguiremo il corso del fiume tra fantastiche piscine naturali, un vero e proprio paradiso terrestre che ci portetà all'ultima cascata segreta!
