I aim to demystify the process. Its not rocket science: people have been baking bread this way for hundreds of years. We get the convenience of electric oven and refrigeration to give more quality control. And the result couldn't be more delicious Weigh and mix your dough. Learn about the magical enzymatic transformations taking place in the dough as your future loaf autolyses and starts to ferment. Develop your dough by stretching and folding rather than laborious kneading. Shape and prove your loaf. While the bread is rising create a herbed flatbread and an enriched sweet bread which will be part of your delicious lunch. After lunch your bread will be ready for baking. While it is in the oven create your own starter to keep and learn how to maintain it, incorporating baking into your lifestyle.
I have been baking bread for family and friends for many years, but in the last 4 years I have focused on sourdough and slow fermentation baking. I have made it a point to attend classes with some great UK bakers, notably Vanessa Kimble at The Sourdough School, and also at River Cottage, and Bread Ahead. I love to share the simple joy of baking fresh nutritious bread from just flour, water and salt.
