Det skal I lave

First, we will introduce each other. I will explain about how to make delicious soba. I will give you my delicious soba recipes. Please put on aprons and also plastic gloves. We will start making soba dough. Making a good soba dough requires some skill. Amount of water may vary depend on the weather and season. After we finish making soba dough, we will cut the dough into noodles. We will boil it and cool it. We will enjoy it for lunch or dinner. Japanese cuisine is recognized as intangible cultural heritage by UNESCO and there are many kinds of Japanese food but soba making is unique, traditional and loved by many nationalities. Japanese have a spirit called "omotenashi". It's about providing heartwarming treatment and service. The culture of making buckwheat noodles in my own home and offering it to customers with sincerity is a representation of the true spirit of hospitality. A valuable experience which can not be enjoyed in the restaurant is possible in this workshop. I hope you enjoy making soba and try to make it at home. I also teach Japanese calligraphy and green tea ceremony so if you would like to learn, let me know. (option)

I’ve visited 30 countries and made friends all over the world. One of my passions is introducing Japanese culture and cuisine wherever I go, and I enjoy making delicious soba noodles for people. After I started showing friends and family how to make soba, others heard about me through word of mouth. Now, I’ve been teaching classes for the last 5 years. When I’m not making soba, I run an IT firm and am assistant teacher for green tea ceremonies and Japanese calligraphy. I have the qualifications of food sanitation management which is taken by restaurants in Japan. I pay close attention to hygiene management.

It will be held at my private home which is traditional old house where you can see the traditional way of living. Traditional old house became rare to find these days since there are many modern buildings in Tokyo. Every house facility is all Japanese-style, there is a tea room where you can have a tea ceremony in the house. As it is near from Shinjuku, transportation is convenient, bus and subway trains frequently comes.
