During this hands-on cooking class we will make: - BIGOLI WITH PASTA EXTRUDER, an ancient fresh pasta from Veneto region made with a pasta extruder that I brought in my luggage from Italy. The pasta dough is made with durum wheat flour and eggs and it is extruded by a special pasta machine called Bigolaro designed in 1604. The bronze die is used to create the best quality pasta that you will not find at any American restaurants. - PESTO SAUCE WITH MORTAR AND PESTLE, the authentic sauce from Genoa. This sauce is fantastic with any kind of pasta. Learn how to choose the right basil for pesto, the perfect Italian extra virgin olive oil, the best quality Parmigiano Reggiano and Pecorino Romano cheese from Italy etc. I will teach you all the tricks to make a creamy and super tasty Pesto from scratch that only the Italian chefs know. Ciao, I am Rossella, an Italian Engineer, passionate cook, traveler and founder of Italian Rhapsody in Edmonds (WA). The aim of my business is to share the Italian traditions and culture through food. Pasta is my favorite dish and it must be made the Italian way: from scratch and with fresh ingredients. During this hands-on cooking class we will make fresh Bigoli pasta with a pasta extruder designed in 1604 in Northern Italy. We will also make super creamy Pesto alla Genovese with mortar and pestle. My pasta classes are very popular with couples, families and groups....all pasta lovers!
