Bread making is both simple and complex. In its essence, flour, water and salt mixed together, the dough rises for a while, and then it is baked. Easy, right?! However, within these simple steps there are many variables to consider, and many techniques to master (or get better at), including hand techniques, mixing for proper gluten development, ascertaining when a loaf is properly proofed, scoring technique, and so many other pieces of information that I have learned (sometimes the hard way) and am excited to pass along to you to help you make some great bread! We will be making bread from start to finish in my bakery, which includes weighing out ingredients, mixing, shaping, loading and baking, and eating some fresh bread!

I have been baking bread in asheville for 10 years, and teaching in the area for about 7 years, both at my bakery and at the John C Campbell Folk School. I have been focusing on sourdough artisan crafted breads as a baker: simple everyday good loaves of bread should not be underestimated, and it is truly a wonderful and valuable skill that has existed for thousands of years in our culture. I love to bake bread! Handling the dough, smelling the smells, working with a living food, and finally eating really good bread; all these are joys in my life and I love sharing them with others. Connections around food are so GOOD! I sell my bread at the local farmer's markets where week after week I see familiar faces and smiles; I love the relationships that have formed through the years, and the support that I enjoy from the community.
