Cacao is a food experience that will take you to the tropics and explain, in a very unique way, how we go from the fruit to the bar. Each part of the chocolate-making-process will be represented by a dish, to show you how the sub-products of the process can be used in cooking. Upon arrival, guests will be invited to make their own cocktail, as I teach you about "spherification"; a technique developed by El Bulli restaurant. This will be the first taste of the Cacao fruit. We will then move to the table, were the tasting menu starts. As we progress, I'll be explaining to what part of the process that dish belongs to and what sub-product we are using. We will go from the pulp, to the seed, then the cocoa butter, the cocoa mass to lastly arrive to the chocolate. During the dinner, guests will be engaging with the ingredients I bring to the table, as well as with each other. This is very much the case were everybody ends ups sharing and knowing each other! For dessert, guests will be asked to plate their dessert, all together, in the same table where they have been sharing bread. My hope is that people leave happy, satisfied and with a deeper understanding of the cacao fruit, it's origins and of the people the grew close to it. You'll also get a little good-bye gift to remember us by! Please note that, although this is a highly engaging experience, it is not a cooking class.

Dinner will be taking place at my place in Haggerston. I have duplex facing a park, right next to the overground station, so it is very easy access. Plants and loads of art make our home cosy and cool and I hope you feel warm and welcomed, not only by the food but also by the space. Kitchen and living room are in the same open space, so we should be quite comfortable. Tunnel, our cat will be hanging around too. Smoking is allowed in the balcony
